Cheat 2-Min Noodle Stir-fry

There are days where you are just exhausted and you know you haven’t eaten enough healthy things in a while. Certainly not enough vegetables today. You also know that those 2 -minute noodles in the cupboard are looking mighty tempting.
Here’s my single mum trick (my new partner loves it too, easy to double it).
INGREDIENTS
1-2 packets Indomie Mi Goreng (other 2-min noodle alternatives work as well)
1 Tbsp Coconut oil (rice or olive alternative)
1-2 eggs
2 mushrooms
1 pak choy
1/2 cup capsicum (red, green and/or yellow)
1 head cauliflower
1 Tbsp or large splash to taste soy sauce
1 tsp or small splash of fish sauce (prawn paste alternative)
1 tsp or splash of sesame oil
Optional/Alternatives:
2 heads broccoli
4-5 string beans
1 quarter chopped onion
chilli flakes
Small quantity of any vegetable in your fridge drawer you need to get rid of or feel like popping in.
Method or Madness?
Heat coconut oil in frying pan (or wok if you’re keen). While this is happening largely chop your vegetables.
Put vegetables in heated pan and fry.
Place 2-minute noodles in bowl of water and heat in microwave for 1 minute. Poor excess water out of bowl until just lower than noodle level. Add packet mix sauces and return to microwave for further 1.5 minutes.
Stir vegetables and add soy sauce, fish sauce and sesame oil.
Take noodles out of microwave and stir. Once vegetables are tender, add to bowl of noodles.
Pan fry egg in frying pan to desired consistency.
Add egg to top of noodles & vegetables.
